Thai Peanut Curry Chicken - Easy One-Pan Dinner

This classic peanut curry was our favorite dish at a small, family-owned Thai restaurant in Sarasota. When they closed their doors some years ago, we knew we had to recreate it at home. Our version comes together in a single skillet, using a blend of easy-to-find ingredients to create a dish we enjoy every bit as much as the original.

Thai Peanut Curry Chicken

Boneless chicken thighs simmer in a creamy blend of coconut milk, peanut butter, red curry paste, lime, and fish sauce. Finished with fresh spinach, scallions, and chopped peanuts, and served over jasmine rice, it's a restaurant-worthy dinner you can easily make at home.
